  • 300g sashimi-grade yellowtail (hamachi) or sea bass
  • 3 tbsp fresh lime juice
  • 2 tbsp yuzu juice (or additional lime juice)
  • 1 tbsp white miso paste

  • 1 tbsp soy sauce
  • 1 tsp freshly grated ginger
  • ½ tsp honey
  • 1 small shallot, minced
  • ½ ají amarillo, minced
